You can add some sparkle with a humble can of fizzy drink. Here are some recipe ideas to “pop” in the oven . . .
SCONE SWAP: Try including your favourite fizzy drink with scones.
You need: 2 cups self-raising flour; 2 tbsp caster sugar; ½ cup cream; ½ cup of lemonade, or fizzy drink of your choice.
Combine sifted flour and sugar in a large bowl. Make a well in the centre and add the cream and fizzy drink.
Gently stir until you have a sticky dough (add more of the fizzy drink if required.) Then on a flour-dusted surface knead to form a smooth dough. Cut out nine circles of around 3cm thick and place on a lined pan. Bake at 190C for 25 minutes. Leave to stand then serve.
DR PEPPER CAKE: All you need is a box of plain chocolate cake mix and a 330ml can of Dr Pepper.
Preheat your oven to 180C and grease a 33cm cake tin. In a large bowl, combine the cake mix and Dr Pepper and mix until smooth. Pour into your tin and bake for around 25 minutes or until a toothpick comes out clean.
Once cooled, you can choose to add toppings such as hot fudge, chocolate sauce or cherries, for extra indulgence.
GAME FOR GAMMON: You need: 2kg unsmoked boneless gammon joint; 2L bottle cola; 1 onion; treacle; mustard powder; brown sugar.
Chop your onion into quarters with the skin on and pop into a slow cooker with the gammon. Pour cola over top and cook on high for about six hours.
Once done, remove any excess fat from your gammon and place on a lined tray. Cover with treacle and a dusting of mustard powder and brown sugar. Place in preheated 210C oven for around 15 minutes.
OUT OF EGGS? You can often use fizzy drinks instead. As a general rule, one 330ml can replaces two eggs in cake recipes.
