DIY pulled pork

Serves four

This pulled pork tastes even better when mixing the BBQ sauce and its cooking liquid

Total time: 4 hours and 30 minutes

YOU NEED:

  • 1.3 kg boneless pork shoulder
  • 1 tsp pepper
  • 2 tsp smoked paprika
  • 1 tbsp ground cumin
  • 2 tsp brown sugar
  • 2 tsp mustard powder
  • 2 tsp garlic salt
  • 2 tbsp black treacle
  • 400ml cider
  • 295g BBQ sauce

METHOD: Pre-heat the oven to gas 2, 150C, fan 130C. Mix all of the dry ingredients together and rub all over the pork. Mix the treacle and cider and set aside.

Pop the pork in a deep casserole dish, skin side up and pour in the cider mix. Cover with a lid and place in the oven for at least four hours until falling apart. Check mid-way.

Remove from the oven, drain the liquid and set to one side (skim away the fat). Remove the skin and shred the meat with two forks.

Mix one third to half of the liquid with the BBQ sauce, combine with the pork – perfect as a taco filling with a mango salsa.

Crispy southern chicken

Serves six

This crispy southern chicken is best served with fries, coleslaw and charred corn on the cob

Preparation time: 40 minutes

Cooking time: 50 minutes

YOU NEED:

  • 6 chicken legs
  • 175g buttermilk
  • 125g plain flour
  • 125g panko breadcrumbs
  • 3 tsps Southern Fried seasoning
  • 1 tsp smoked paprika
  • 1 tsp onion salt
  • ½ tsp Chinese 5-spice

METHOD: Prepare the chicken by cutting the legs across the centre to separate the drumsticks from the thighs. Mix the chicken in a bowl with the buttermilk and leave for 30 minutes.This will help tenderize the chicken and help the crumb mix stick.

In a separate bowl, mix the flour and breadcrumbs with all the spices including a big twist of black pepper. Coat each piece of chicken thoroughly in the crumb and place on to a wire rack sitting on a baking tray. This will help keep the chicken crisp.

Bake in the oven at 175 degrees for 50 minutes or until the chicken is cooked through. Serve with fries, coleslaw and charred corn on the cob.
