MAKE this Father’s Day one for Dad to remember.
Though the family might not all be together today, you can still rustle up delicious treats to take over for a social-distanced celebration.
With Morrisons and some other cafes reopening this week, you could also pick up his favourite takeaway goodies for only a few pounds.
Here is our pick of the dad dishes to enjoy at home or take from your place to his.
Beetroot chocolate cake
Serves 12 – 74p per serving
Preparation time: 20 minutes
Cooking time: 40 minutes
YOU NEED:
- 225g self-raising flour
- 70g cocoa
- 200g demerara sugar
- 150ml sunflower oil
- 300g cooked beetroot
- 3 large eggs
- 3 tbsp milk
- 200g white chocolate, broken into cubes
- 300g low-fat soft cream cheese
- 30g chocolate curls
METHOD: Preheat the oven to 180C/gas mark 4. Line the base of a 20cm round loose-bottom cake tin with a circle of baking parchment. Lightly brush the sides of the tin with a little oil. Sift the flour and cocoa into a large mixing bowl and stir in the sugar.
In a food processor, blend together the oil, beetroot, eggs and milk and pour over the dry ingredients. Mix thoroughly. Spoon the mixture into the prepared tin and level with the back of a spoon. Bake for 40 minutes, or until a skewer comes out clean when inserted into the centre of the cake.
Transfer to a wire rack to cool completely. To decorate, melt the white chocolate cubes in a bowl over a pan of gently simmering water until smooth. Remove from the heat then beat well with the cream cheese.
Spread the mixture over the sides and top of the cake, roughing it up with a palette knife. Scatter grated chocolate or choc curls over the top and cut into wedges to serve.
Ultimate turkey build a burger
Serves four – £1.90 per serving
Preparation time: Five minutes
Cooking time: 15 minutes
YOU NEED:
- 4 turkey burgers
- 4 brioche buns
- 1 baby gem lettuce
- 4 beef tomatoes
- Squeeze of ketchup
- Squeeze of yellow mustard
- 1 red onion
- 300g coleslaw
- 4 slices of mature cheddar
METHOD: Grill your turkey burgers. Lightly toast the brioche buns. Turkey burgers take on flavours really well, so layer on baby gem lettuce leaves and sliced beef tomatoes as your basic topping.
For extra taste, add one slice of cheddar per burger. Slice and arrange raw onion for crunch, or sauteed onions to soften and caramelise for a sweeter taste.
Want to personalise Dad’s dish? Pile on more of his favourite toppings, from boiled egg to chili to onion rings.
Finish your burger with a dash or coleslaw and mustard or ketchup.
Shandy with homemade lemonade
Serves six – 54p per serving
Preparation time: Ten minutes
YOU NEED:
- 660ml bottled beer – use dad’s favourite
- 250ml soda water
- 100ml cold water
- 85g golden caster sugar
- 2 lemons, sliced
METHOD: Rinse the lemons under hot running water to remove any wax. Cut the lemons into wedges.
Place the wedges, sugar and 100ml of cold water into a food processor and whiz to a pulp. Strain the mixture into a jug and stir in the soda water.
Taste the mixture and sweeten with extra sugar if needed. Pour the juice equally into six glasses. Top up with the beer and enjoy.
