CHEERS to the bank holiday weekend.
Times have been tough but, with an extra day off for many, you may as well raise a glass to making it through such a strange time.
Us Brits love our prosecco and there are few homes without a bottle — but if you fancy jazzing it up, these ideas can magic it into cheap-and-easy cocktails . . .
APERITIVO TIME: A refresh-ing Aperol Spritz is a summer fave and you can make your own without much effort or outlay. Fill a large wine glass with ice then mix equal parts of prosecco with Lidl’s own aperitivo, Bitterol, £7.99. This is nearly half the price of Aperol, on sale at Tesco and Waitrose for £15. Top up with a dash of soda and an orange slice, if you feel fancy.

GIN IT TO WIN IT: Two iconic drinks — gin and prosecco. So what about both together? For a sassy garden beverage, try making a pink-gin spritz. I like to use 50ml Gordon’s Pink — currently £13 at Asda, down from £16.50 — into a large wine glass filled with ice. Then simply add an equal measure of lemonade and top off with around 25ml of prosecco. Simply delightful.

SUPER SORBET: Fancy something a little more indulgent? Lemon lovers need to try this. All you need is your prosecco and some lemon sorbet — you can get a 900ml tub of Gianni’s from Aldi for £1.99, which works out as better value than at Sainsbury’s where a 500ml tub is £2.20. Simply plonk a large scoop of sorbet in your glass – pre-chilled, if you like — then top off with prosecco. Maybe add a few shavings of lemon zest and mint for extra kick.
CIDER HOUSE RULES: Prosecco and cider go together supris-ingly well. Fill a glass with two parts chilled prosecco, one part apple cider. I’m a fan of Aspall Draught Apple Cyder, £2 a bottle at Tesco, and you can currently get three bottles for £5. Perhaps add a splash of brandy for extra punch.
