Mrs Crunch recipes in association with Morrisons

Blazing bruschetta

(Serves 4 – £1.15 per serving)

If you to make it a meal and not a starter or side dish, try topping with tuna or egg salad

Preparation time: 5 minutes

Cooking time: 3 minutes

YOU NEED:

  • 300g cherry tomatoes, quartered
  • 4 tbsp extra virgin olive oil
  • 2 garlic cloves (1 minced and 1 whole)
  • Small handful of basil, torn
  • 1 red chilli, finely chopped
  • 4 slices of crusty bread
  • 250g ricotta
  • Pinch of salt and pepper
  • Balsamic glaze (optional, to drizzle on top)

METHOD: Place the tomatoes in a mixing bowl and add the olive oil, crushed garlic, basil, chilli and a generous seasoning of salt and pepper and mix.

Toast the bread or place it under the grill for a few minutes, then rub with the remaining garlic clove.

Spread the ricotta evenly across each piece of bread and then top each with the tomato mixture.

Add basil to garnish, a crack of black pepper and a drizzle of balsamic glaze and enjoy.

Spicy salami carbonara

(Serves 4 – £1.95 per serving)

This also works with sausages – but ensure they are cooked through, top with parsley and extra cheese for richer flavour

Preparation time: 5 minutes

Cooking time: 15 minutes

YOU NEED:

  • 350g dried spaghetti
  • 8 egg yolks
  • 125g Parmesan, finely grated (set 20g aside to sprinkle on top)
  • Pepper
  • Tbsp olive oil
  • 2 cloves of garlic, minced
  • 80g salami torn into strips
  • Handful of rocket

METHOD: Drop the spaghetti into boiling, salty water and cook for ten minutes Meanwhile, mix the egg yolks and Parmesan and season with pepper, then set aside.

Add oil to a pan over a medium-high heat and stir through the garlic for one minute. Add the salami and cook until the salami is crispy.

Drain the spaghetti (setting some of the pasta water aside), transfer to the salami pan and toss through. Reduce to a low heat and pour in the egg yolk mixture, continuing to stir so that the eggs do not scramble.

Add a little of the pasta water to loosen. Serve with a sprinkle of rocket and enjoy.

Midweek meatball bake

(Serves 4 – £1.23 per serving)

For the firmest meatballs, work quickly and handle them as little as possible, or mix the ingredients beforehand and chill for up to an hour before shaping them

Preparation time: 10 minutes

Cooking time: 45 minutes

YOU NEED:

  • 500g beef mince
  • 120g breadcrumbs
  • 2 tbsp mixed Italian herbs
  • 1 egg
  • 125g mozzarella cut into 16 cubes
  • 3 tbsp olive oil
  • 2 garlic cloves minced
  • 1 small red onion chopped
  • 800g chopped tomatoes
  • 100g Parmesan grated
  • Salt and pepper

METHOD: Pre-heat the oven to gas 6, 200C, fan 180C. Mix the mince, breadcrumbs, herbs and egg and season well. Wrap each mozzarella cube with 2 tbsp of meat mixture and shape tightly into a ball.

Add two tbsp of oil to a pan over a medium-high heat and brown the meatballs in batches, then set aside. Add one tbsp of oil to an oven-proof pan on a medium-high heat and fry the garlic and onion for a few mins.

Add the tomatoes, simmer for five mins and season. Add the meatballs to the sauce, scatter with grated Parmesan and bake in the oven for 30 minutes. Serve, dig in and scoop up with some crusty bread.
